Smoked Wings

  1. Thaw Wings if frozen
  2. Pat Dry
  3. Add baking powder or corn starch for crispy skin
  4. Add Heavy Rub
  5. Let rest in Fridge for 30 mins minimum (dry brine)
  6. Smoke at 250 until mostly done
  7. Then Raise smoker temp to 400 until crispy and internal temp is 165

Notes​

  • To Dethaw Wings
    • Fill a large bowl with lukewarm water and put the bag of wings in there for ~20mins, do that twice and they'll be thawed.
  • go to Costco for wings, 5lbs for $25

      7. Then Raise smoker temp to 400 until crispy and internal temp is 165
    • Research
    • Next Attempt
      • Thaw wings earlier
      • Pat Dry completely
      • Lightly salt and baking powder, then sit in fridge
      • Pat dry once more
      • Then add rub right before smoking
      • Smoke on Higher temp, around 375 (should cook quick)
      • Wanna make them sweeter, look into more brown sugar.
